Bacon, Egg & Cheese Quiche: A precooked breakfast can save valuable time on mornings when everyone needs to head off to work or school. You do the preparation on your own time-table instead of when time is precious.

A Bacon Pro will help you cut the time it takes to cook enough crisp bacon for the quiche. It also saves clean-up time, so you can serve a great breakfast without all of the work.

A quiche is a great way to satisfy everyone in the household. With this recipe, you can make 2 regular size 9.5" quiches for times when everyone eats together or 4 smaller 4.5" mini size quiches for individual servings according to circumstances. This way everyone has the option of getting a warm and tasty breakfast to start their day.

In this case (pictured), we used the CorningWare® 16 oz. round dish. The fluted ones with the vertical sides and plastic covers. You could substitute by using the Libbey® 4.9" pie plates.

Recipe: (2) 9" Quiche (serves 6 each) -- (4) 4.5" Quiche (serves 3)


1 lb of sliced bacon (chopped/crumbled)

10 large eggs

3 cups milk/half-and-half

1 cup sharp cheddar cheese (grated)

1 cup swiss cheese (grated)

4 tbsp. onion (chopped)

1 tsp black pepper

2 tsp salt

2 refrigerated Pillsbury pie crust

Roll out the pie crust, cut to size and lay into dish. Lightly sprinkle half of the grated cheddar and 1/4th of crumbled bacon across the bottom of the pie crust. Mix 1/2 of the bacon with the eggs, milk, onion, pepper, salt and the rest of the cheddar in a bowl. Wisk and pour the into the dishes. Toss the swiss and remaining bacon in a bowl and sprinkle across the top.

Bake in preheated oven at 325F for 10 minutes. Remove from the oven and allow it to cool. While it is still slightly warm, place press-and-seal plastic wrap inside the dish to cover the contents. Place the cookware cover on top of each dish. If you don't have cover, use foil as a substitute. When needed, reheat at low to medium temperature until warm and enjoy.
